Course intent

Caribbean cuisine is a fusion of African, Creole and Latin-American influences, blended in a unique way, bold and full of flavour. The intent of this course is to introduce you to the ingredients, skills,& techniques of West Indian cookery, using recipes that are healthy, tasty and easy for you to reproduce at home.

What will I learn?

You will learn how to cook traditional Caribbean dishes from scratch, using fresh ingredients and traditional spices and flavourings. You will learn the techniques and skills that will enable you to recreate these authentic dishes at home long after the workshop.

You will prepare. · Escovitch Fish or Jerk Chicken with Rice and Peas · Mango and pineapple relish, · Sweet Jamaican Festival dumpling, · Sticky Jamaican Ginger Cake

Who is this course for? Is there anything I need to know before joining?

This course is designed for all cooks but will not suit complete beginners.

What do I need to bring to the first class? Will there be any extra costs?

Please ensure you have completed the following before the first session: · Returned a completed food allergies form. The link will be emailed to you when you enrol. · Informed tutor Christine.r.johnson@surreycc.gov.uk if you would like adaptions to any dish. · You will be emailed a workbook listing all you need to know for the workshop. Please read the workbook. This will outline some ingredients you need to bring with you and what is supplied.

What can I do when I finish the course?

We offer a range of culinary workshops and courses throughout the term, look at our website for all the details. It would be great to see you again.

We welcome learners with additional needs and disabilities. When you enrol, please let us know if you would like to discuss your extra support needs with a member of the Supported Learning Team who will then contact you as soon as possible. If you are enrolling within 10 days of the course start date, we may not be able to contact you before your first class.
